Zesty Baked Chicken with Roasted Red Pepper and Basil Sauce



Ingredients


- 4 boneless, skinless chicken breasts
- 1 cup roasted red peppers, drained and chopped
- 3 cloves garlic, minced
- 1/2 cup fresh orange juice
- 2 tablespoons lemon juice
- 1/4 cup fresh basil leaves, chopped
- 3 tablespoons butter, divided
- 1 teaspoon salt
- 1/2 teaspoon fresh ground black pepper

Instructions



1. Preheat the Oven:
Preheat your oven to 375°F (190°C).

2. Season the Chicken:
Season the chicken breasts with salt and fresh ground black pepper on both sides.

3. Prepare the Sauce:
In a medium saucepan over medium heat, melt 2 tablespoons of butter. Add the minced garlic and sauté until fragrant, about 2 minutes. Stir in the chopped roasted red peppers, orange juice, and lemon juice. Simmer for 5 minutes.

4. Blend the Sauce:
Remove from heat and allow the mixture to cool slightly. Transfer to a blender or use an immersion blender to purée the mixture until smooth. Stir in the chopped fresh basil.

5. Prepare the Baking Dish:
Use the remaining tablespoon of butter to grease a baking dish large enough to hold the chicken breasts in a single layer.

6. Combine and Bake:
Place the seasoned chicken breasts in the prepared baking dish. Pour the blended sauce over the chicken, ensuring each piece is covered completely. Cover the dish with aluminum foil.

7. Bake the Chicken:
Bake in the preheated oven for 20 minutes. Remove the foil and continue baking for an additional 10-15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

8. Serve:
Carefully remove the chicken breasts from the oven and let them rest for 5 minutes before serving. Drizzle any remaining sauce from the baking dish over the chicken before serving.
