Spicy Bacon-Corn Cheese Dip
Ingredients
- 2 cups corn kernels
- 1 red bell pepper, diced
- 2 green chilies, finely chopped
- 6 slices bacon, chopped
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 8 oz cream cheese, softened
- 1/2 cup sour cream
Instructions
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).
2. Cook the Bacon:
- In a medium skillet over medium heat, cook the chopped bacon until crispy, about PT8M (8 minutes).
- Remove bacon and place it on a paper towel-lined plate to drain excess fat.
3. Sauté Vegetables:
- In the same skillet, using the remaining bacon grease, sauté the red bell pepper, green chilies, and corn kernels for PT5M (5 minutes) until they are slightly softened.
4. Mix Ingredients:
- In a large mixing bowl, combine the sautéed vegetables, cooked bacon, chili powder, cumin, salt, black pepper, cream cheese, sour cream, and half of the shredded cheese. Mix until well combined and smooth.
5. Bake the Dip:
- Transfer the mixture into an oven-safe dish.
- Sprinkle the remaining shredded cheese over the top.
- Bake in the preheated oven for PT20M (20 minutes) until the cheese is bubbly and golden brown.
6. Garnish and Serve:
- Remove from oven and let it cool slightly.
- Garnish with freshly chopped cilantro.
- Serve hot with your choice of tortilla chips, sliced baguette, or fresh vegetables.
