Decadent Stove-Top Coconut Butter Rice Pilaf
Ingredients
- 1 cup long-grain white rice
- 2 cups water
- 1/2 teaspoon salt
- 2 tablespoons butter
- 1 tablespoon coconut oil
- 1/2 cup chicken or vegetable stock
Instructions
1. Prepare the Ingredients:
Rinse 1 cup of long-grain white rice under cold water until the water runs clear to remove excess starch. Drain thoroughly.
2. Melt Butter and Coconut Oil:
In a medium-sized saucepan with a lid, heat 2 tablespoons of butter and 1 tablespoon of coconut oil over medium heat until melted and shimmering.
3. Toast the Rice:
Add the rinsed and drained rice to the saucepan. Sauté gently, stirring occasionally, for about 3-4 minutes, or until the rice is lightly toasted and gives off a nutty aroma.
4. Add Liquids and Salt:
Carefully pour in 2 cups of water and 1/2 cup of your choice of chicken or vegetable stock. Stir in 1/2 teaspoon of salt.

6. Simmer the Rice:

Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes to allow the rice to firm up. Fluff the rice gently with a fork before serving.
