Apple Cinnamon Oatmeal with Kimchi and Spinach
Ingredients
- 1 cup quick cook oats
- 2 cups milk
- 2 tablespoons honey
- 1 apple, peeled, cored, and diced
- 1/2 teaspoon ground cinnamon
- 1 tablespoon maple syrup
- 2 tablespoons brown sugar
- 1/4 teaspoon mixed spice (such as nutmeg and allspice)
- 1/2 cup kimchi, chopped
- 1 cup spinach, fresh and coarsely chopped
Instructions
1. Prepare the Apple Topping
- In a small saucepan over medium heat, combine the diced apple, 2 tablespoons of brown sugar, ground cinnamon, and mixed spice.
- Cook for approximately 5 minutes (PT5M), stirring occasionally, until the apples are soft and caramelized.
- Remove from heat and set aside.
2. Cook the Oatmeal
- In a medium saucepan, bring 2 cups of milk to a simmer over medium heat.
- Stir in 1 cup of quick cook oats and reduce the heat to low.
- Cook for about 5 minutes (PT5M), stirring frequently, until the oats are cooked and creamy.
3. Add Sweeteners
- Remove the oatmeal from the heat.
- Stir in 2 tablespoons of honey and 1 tablespoon of maple syrup. Blend well to integrate flavors.
4. Incorporate Kimchi and Spinach
- Gently fold in 1/2 cup of chopped kimchi and 1 cup of chopped spinach into the cooked oatmeal.
- Stir until the spinach has wilted and the kimchi is evenly distributed.
5. Serve
- Divide the oatmeal into four serving bowls.
- Top each bowl with a generous spoonful of the prepared apple topping.
- Serve immediately for a warm, savory-sweet breakfast experience.
