Asparagus and Tuna Cavatappi with Lemon Parmesan Sauce
Ingredients
- 12 oz cavatappi pasta
- 1 tablespoon olive oil
- 2 tablespoons butter
- 2 shallots, finely chopped
- 3 cloves garlic, minced
- 1 cup asparagus, cut into 1-inch pieces
- 1/2 cup chicken or vegetable stock
- Zest of 1 lemon
- 2 cans (5 oz each) tuna in water, drained
- 2 cups arugula
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons lemon juice
- Salt and pepper to taste
- 1/4 cup toasted breadcrumbs
Instructions
1. Boil the Pasta
- Bring a large pot of salted water to a boil. Add the cavatappi and cook according to package instructions until al dente. Drain and set aside.
