Bacardi Raisin Cinnamon Pie
Ingredients
- 1 cup raisins
- 1/2 cup Bacardi rum
- 1 cup water
- 1/2 cup sugar
- 1/2 cup all-purpose flour
- 1 cup evaporated milk
- 1/2 cup butter, melted
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 2 pre-made pie crusts
Instructions
1. Preheat the Oven
- Preheat your oven to 375°F (190°C).
2. Prep the Raisins
- In a small saucepan, combine the raisins with the Bacardi rum.
- Heat the mixture over low heat until the raisins are plump and have absorbed most of the rum, approximately 10 minutes.
- Remove from heat and set aside.
3. Prepare the Filling
- In a medium saucepan, combine water, sugar, and all-purpose flour.
- Gradually add evaporated milk while stirring continuously to avoid lumps.
- Cook over medium heat, stirring frequently, until the mixture thickens, approximately 10 minutes.
- Remove from heat and stir in the melted butter, salt, cinnamon, and vanilla extract.
- Mix until smooth and well combined.
4. Assemble the Pie
- Roll out one pie crust and fit it into a 9-inch pie pan.
- Evenly spread the rum-infused raisins over the bottom of the pie crust.
- Pour the prepared filling over the raisins, ensuring an even layer.
- Top with the second pie crust, crimping the edges to seal.
- Cut slits into the top crust to allow for steam release.
5. Bake the Pie
- Place the pie on the middle rack of your preheated oven.
- Bake for 35-40 minutes or until the crust is golden brown and filling is bubbling slightly through the slits.
6. Cool and Serve
- Remove from the oven and let the pie cool on a wire rack for at least 1 hour before serving.
