Bacon and Egg Salad on Toast with a Zesty Kick
Ingredients
- 4 large eggs
- 4 strips of bacon
- 2 tablespoons mayonnaise
- 1/2 teaspoon mustard powder
- 1-2 dashes hot sauce (to taste)
- 1/4 cup red onion, finely chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh chives, chopped
- Salt, to taste
- Pepper, to taste
- 1 teaspoon reserved bacon fat
- 4 slices of your choice of toast
Instructions
1. Prepare the Eggs:
- Place eggs in a saucepan and cover with water. Bring to a boil over medium heat on the stove.
- Once boiling, remove the saucepan from the heat, cover with a lid, and let sit for 12 minutes.
- Transfer eggs to a bowl of ice water for 5 minutes to cool. Peel eggs and roughly chop them.
2. Cook the Bacon:
- In a frying pan over medium heat, cook bacon until crispy, about 6-8 minutes.
- Remove bacon, reserving 1 teaspoon of the bacon fat, and place on paper towels to cool.
- Once cooled, crumble bacon into small pieces.
3. Make the Egg Salad:
- In a large bowl, combine chopped eggs, mayonnaise, mustard powder, hot sauce, red onion, parsley, chives, reserved bacon fat, salt, and pepper.
- Gently fold in the crumbled bacon. Adjust seasonings as desired.
4. Toast and Serve:
- Toast 4 slices of your choice of bread until golden brown.
- Evenly distribute the bacon and egg salad over the toasted bread slices.
- Garnish with additional chives and parsley if desired.
- Serve immediately and enjoy your flavorful lunch!
