Baked Acorn Squash with Parmesan and Herbs
Ingredients
- 2 medium acorn squash
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic salt
- 1/2 teaspoon chili powder
- 1 teaspoon dried thyme
- 3 tablespoons extra-virgin olive oil
- Fresh parsley for garnish
Instructions
1. Preheat the Oven:
Preheat your oven to 400°F (200°C).
2. Prepare the Squash:
Carefully cut each acorn squash in half from stem to tip using a sharp knife. Scoop out the seeds and stringy pulp using a spoon.
3. Season the Squash:
Place the squash halves cut side up on a baking sheet lined with parchment paper. In a small bowl, mix together the garlic salt, chili powder, and dried thyme.
4. Drizzle and Sprinkle:
Drizzle each squash half with about 1/2 tablespoon of extra-virgin olive oil. Evenly sprinkle the mixed spices over the squash halves, ensuring thorough coverage.
5. Bake the Squash:
Place the baking sheet in the preheated oven and bake for 35-40 minutes, until the squash is tender and the edges are lightly caramelized. You should be able to easily pierce the flesh with a fork.
6. Add the Cheese:
Remove the baking sheet from the oven and sprinkle grated Parmesan cheese over each squash half. Return to the oven for an additional 5-7 minutes, until the cheese is melted and slightly golden.
7. Garnish and Serve:
Remove from the oven and let the squash cool for a few minutes. Finish with a garnish of freshly chopped parsley. Serve while warm.
