Baked Chickpea and Artichoke with Lemon and Feta
Ingredients
- 2 (15-ounce) cans chickpeas, drained and rinsed
- 1 (14-ounce) can artichoke hearts, drained and quartered
- 2 lemons, zested and juiced
- 1 large shallot, thinly sliced
- 1/4 cup olive oil
- 1 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. Preheat the Oven: Preheat your oven to 400°F (200°C).
2. Prepare the Baking Dish: In a large mixing bowl, combine the chickpeas, artichoke hearts, lemon zest, lemon juice, and sliced shallot. Drizzle with olive oil and mix well to ensure everything is coated.
3. Season the Mixture: Add the salt and black pepper to the bowl, stirring again to distribute the seasoning evenly throughout the chickpea and artichoke mixture.
4. Assemble the Dish: Transfer the seasoned mixture into a 9x13-inch baking dish, spreading it out to form an even layer.
5. Bake the Ingredients: Place the baking dish in the preheated oven, and bake for about 25-30 minutes, or until the chickpeas are slightly crispy and the artichokes have developed a nice golden edge.
6. Add Feta and Bake More: Remove the dish from the oven, sprinkle the crumbled feta cheese on top, then return it to the oven for an additional 5 minutes to allow the cheese to warm and slightly melt.
7. Finish with Fresh Parsley: Once the cheese has softened, remove the dish from the oven and sprinkle the chopped fresh parsley over the top for a burst of color and freshness.
8. Serve: Allow the dish to cool slightly before serving. Enjoy it warm as a delightful vegetarian dinner option.
