Baked Feta Pasta with Roasted Cherry Tomatoes
Ingredients
- 1 block (8 oz) Feta cheese
- 2 cups Cherry tomatoes
- 1/4 cup Olive oil
- 3 cloves Garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp Chili flakes (adjust to taste)
- 12 oz Pasta (such as penne or fusilli)
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- Fresh Basil leaves, for garnish
- Fresh Parsley, for garnish
Instructions
1. Preheat and Prep:
- Preheat your oven to 400°F (200°C).
- Arrange the cherry tomatoes in a 9x13-inch baking dish, creating a space in the center for the feta cheese block.
- Place the block of feta in the center of the dish.
2. Season:
- Drizzle the olive oil over the feta and cherry tomatoes.
- Sprinkle the minced garlic, Italian seasoning, chili flakes, salt, and black pepper evenly over the top.
3. Bake:
- Bake in the preheated oven for about 30 minutes, or until the tomatoes have burst and the feta is golden on top.
4. Cook Pasta:
- Meanwhile, in a large pot, bring salted water to a boil.
- Cook the pasta according to the package instructions until al dente.
- Reserve 1/2 cup of the pasta water, then drain the pasta and set aside.
5. Combine:
- Once the feta and tomatoes are finished baking, remove the dish from the oven.
- Stir the ingredients together in the baking dish, smashing the tomatoes to create a creamy sauce.
6. Mix in Pasta:
- Add the cooked pasta to the baking dish, mixing well to coat the pasta with the sauce.
- If the sauce seems too thick, gradually add reserved pasta water until desired consistency is reached.
7. Garnish and Serve:
- Tear fresh basil and parsley leaves and sprinkle them over the pasta.
- Serve hot and enjoy!
