Baked Italian Sausage and Herb Rice Casserole
Ingredients
- 2 tablespoons olive oil
- 1 pound hot Italian sausage, casings removed
- 1 large white onion, finely chopped
- 3 cloves garlic, minced
- 1 ½ cups basmati rice
- 3 cups chicken or vegetable broth
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- ¼ cup chopped fresh parsley
Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C).
2. Cook the Sausage
Heat olive oil in a large oven-safe skillet over medium heat. Add the hot Italian sausage, breaking it up with a spoon. Cook for 6-8 minutes until browned and cooked through. Remove the sausage from the skillet and set aside.
3. Sauté the Onion and Garlic
In the same skillet, add the chopped white onion. Sauté for 3-4 minutes until softened. Add the minced garlic and sauté for an additional 1 minute, stirring frequently to prevent burning.
4. Toast the Rice
Stir in the basmati rice, letting it absorb the flavors for about 3 minutes, stirring frequently to ensure even toasting.
5. Combine with Broth
Pour in the chicken or vegetable broth, scraping up any browned bits from the bottom of the skillet. Add the kosher salt and ground black pepper. Stir well to combine.
6. Add Sausage back to the Skillet
Return the cooked sausage to the skillet, spreading it evenly throughout the rice mixture.
7. Bake the Casserole
Cover the skillet tightly with aluminum foil and transfer it to the preheated oven. Bake for 25-30 minutes, or until the rice is tender and has absorbed the broth.
8. Finish with Fresh Herbs
Remove the skillet from the oven and fluff the rice with a fork. Sprinkle chopped fresh parsley over the top for a bright, fresh finish.
9. Serve and Enjoy
Allow the casserole to rest for a few minutes before serving, allowing the flavors to meld.
