Baked Layered Tex-Mex Bean Dip



Ingredients



- 2 tablespoons avocado oil
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ancho chili powder
- 1 teaspoon homemade chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground coriander
- 2 cups refried beans
- 1/2 cup salsa
- 1/4 cup diced green chilies
- 4 ounces cream cheese, softened
- 1/2 cup sour cream
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1 teaspoon hot sauce (optional)
- 1 tablespoon fresh lime juice
- 1 avocado, diced
- 1/2 cup prepared guacamole
- 1/2 cup chopped tomatoes
- 2-3 slices jalapeño
- Fresh cilantro, for garnish

Instructions



1. Preheat the Oven
- Preheat your oven to 350°F (175°C).

2. Prepare the Bean Mixture
- Heat avocado oil and olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for an additional minute.
- Add ancho chili powder, homemade chili powder, ground cumin, smoked paprika, and ground coriander. Stir to combine.

3. Combine with Refried Beans
- Reduce the heat to low, then stir in refried beans, ensuring the mixture is well blended.
- Remove from heat and mix in salsa and diced green chilies until evenly distributed.

4. Prepare Cream Cheese Layer
- In a separate bowl, combine softened cream cheese, sour cream, salt, pepper, cayenne (if using), and hot sauce. Mix until smooth and creamy.

5. Assemble the Dip
- In a baking dish, spread the bean mixture evenly as the bottom layer.
- Spread the cream cheese mixture over the refried bean layer.
- Sprinkle the shredded cheese over the top, ensuring it covers evenly.

6. Bake
- Place the baking dish in the preheated oven and bake for 20 minutes, or until the cheese has melted and the edges are bubbling.

7. Garnish and Serve
- Remove the dish from the oven and let it cool slightly for about 5 minutes.
- Drizzle fresh lime juice over the top.
- Evenly distribute diced avocado, prepared guacamole, chopped tomatoes, and sliced jalapeños over the dip.
- Garnish with fresh cilantro.

Serve warm with tortilla chips or corn chips.
