Baked Salsa Verde Chicken with Melted Pepper Jack Cheese
Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup salsa verde
- 1 cup shredded Pepper Jack cheese
- 2 teaspoons kosher salt
- 1/4 cup fresh cilantro, chopped
Instructions
1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Chicken:
Place the chicken breasts on a clean work surface. Pat them dry with paper towels. Season both sides evenly with kosher salt and black pepper.
3. Sear the Chicken:
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, add the chicken breasts. Sear for 3-4 minutes on each side until golden brown. Do not cook all the way through; this step is just to add a nice crust.
4. Transfer to Oven:
Remove from heat and gently pour the salsa verde over the chicken breasts, ensuring they are well covered.
5. Bake:
Transfer the skillet to the preheated oven. Bake the chicken for approximately 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
6. Add Cheese:
Remove the skillet from the oven. Sprinkle shredded Pepper Jack cheese over each chicken breast. Return the skillet to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
7. Garnish:
Once done, remove the skillet from the oven. Let the chicken rest for a few minutes before serving. Garnish with fresh chopped cilantro.
8. Serve:
Serve hot, with some additional salsa verde on the side if desired.
