Baked Smoky Cannellini Bean Casserole with Bacon



Ingredients



- 4 strips of bacon, chopped
- 2 tablespoons olive oil
- 1 large yellow onion, finely chopped
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt
- 3 cups canned cannellini beans, drained and rinsed
- 2 tablespoons light brown sugar
- 1/2 cup Heinz chili sauce
- 1 tablespoon molasses
- 1 tablespoon Dijon mustard

Instructions



1. Preheat Oven
- Preheat your oven to 350°F (175°C).

2. Cook Bacon
- In a large oven-safe skillet over medium heat, add the chopped bacon. Cook until the bacon becomes crispy, approximately PT6M (6 minutes). Remove the bacon with a slotted spoon and set it aside on a paper towel to drain any excess oil.

3. Sauté Onion
- Using the same skillet with the remaining bacon fat, add the olive oil and yellow onion. Sauté until the onion becomes translucent and soft, about PT5M (5 minutes).

4. Season Onion
- Stir in the smoked paprika and kosher salt until the onion is evenly coated, cooking for an additional 1 minute.

5. Combine Ingredients
- Add the drained cannellini beans, light brown sugar, Heinz chili sauce, molasses, and Dijon mustard to the skillet. Stir to combine all ingredients thoroughly.

6. Simmer
- Let the mixture simmer for PT5M (5 minutes) over medium heat to allow the flavors to meld together. Occasionally stir to prevent sticking.

7. Bake
- Gently stir in the cooked bacon, then place the skillet in the preheated oven. Bake, uncovered, for PT30M (30 minutes) until the casserole is bubbly and slightly thickened.

8. Serve
- Remove the casserole from the oven and let it cool slightly before serving. Enjoy as a comforting dinner alongside crusty bread or a green salad.
