Baked Spinach and Artichoke Pasta with Cheese and Sausage
Ingredients
- 12 oz pasta (your choice)
- 1 cup marinated artichoke hearts, drained and chopped
- 2 cups fresh spinach, chopped
- 1 cup Swiss cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 cup fresh arugula, chopped
- 2 tbsp olive oil
- 1/2 tsp freshly ground black pepper
- 1 lemon, juiced
- 8 oz turkey sausage, sliced
- 8 oz chicken meatballs, cooked and halved
Instructions
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
2. Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add the pasta and cook until al dente as per package instructions.
- Drain the pasta and set aside.
3. Prepare the Sausage and Meatballs:
- In a skillet over medium heat, add 1 tablespoon of olive oil.
- Add turkey sausage slices and cook until browned on both sides, about 5-7 minutes.
- Remove the sausage and set aside.
- In the same skillet, add the chicken meatballs and cook until heated through, about 3-5 minutes.
- Remove from heat and set aside with the sausage.
4. Sauté the Vegetables:
- In the same skillet, add the remaining olive oil.
- Add chopped artichokes and spinach, cooking until the spinach wilts, about 2-3 minutes.
- Season with black pepper and stir in the lemon juice.
- Remove from heat.
5. Assemble the Pasta Dish:
- In a large mixing bowl, combine the cooked pasta, sautéed vegetables, turkey sausage, chicken meatballs, half of the shredded Swiss and mozzarella cheeses, and chopped arugula.
6. Transfer to Baking Dish:
- Lightly grease a 9x13-inch baking dish with olive oil.
- Pour the pasta mixture into the baking dish and spread evenly.
- Sprinkle the remaining Swiss cheese, mozzarella cheese, and all of the Parmesan cheese on top.
7. Bake:
- Cover the dish with aluminum foil.
- Bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
8. Serve:
- Let the dish sit for 5 minutes before serving.
