Baked Taco Spaghetti Casserole
Ingredients
- 1 pound ground beef
- 8 ounces spaghetti noodles
- 1 cup Mexican shredded cheese
- 1 can (14.5 ounces) diced tomatoes, drained
- 2 tablespoons taco seasoning
- 4 ounces cream cheese, softened
- 1 can (4 ounces) green chilies, chopped
- 1 can (16 ounces) refried beans
Instructions
1. Preheat and Prepare
Preheat your oven to 350°F. Grease a 9x13-inch baking dish with a thin coat of cooking spray.
2. Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti noodles and cook according to package instructions until al dente, approximately 8-10 minutes. Drain and set aside.
3. Brown the Ground Beef
In a large skillet over medium heat, add the ground beef. Cook until browned and cooked through, about 6-8 minutes, breaking it up with a spoon as it cooks. Drain excess fat, if necessary.
4. Mix in Flavors
Add the taco seasoning, diced tomatoes, and green chilies to the beef. Stir well to combine. Allow to simmer for 5 minutes to let the flavors meld.
5. Combine with Cream Cheese
Stir in the cream cheese until completely melted and blended into the beef mixture.
6. Layer the Casserole
Spread the refried beans in an even layer at the bottom of the prepared baking dish. Then, layer the cooked spaghetti noodles over the beans. Pour the beef and tomato mixture over the spaghetti, spreading evenly.
7. Top with Cheese and Bake
Sprinkle the Mexican shredded cheese uniformly over the top of the casserole. Cover tightly with aluminum foil.
8. Bake
Transfer to the preheated oven and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
9. Serve
Allow the casserole to cool for a few minutes before slicing. Serve warm, garnishing with extra toppings like sour cream or fresh cilantro if desired.
