Baked Vanilla Chia Breakfast Pancakes



Ingredients



- 1 cup cottage cheese
- 1/2 cup Greek yogurt
- 2 large eggs
- 2 egg whites
- 2 teaspoons vanilla extract
- 1 cup oat flour
- 1/2 cup almond flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 tablespoons chia seeds

Instructions



1. Preheat the Oven: Preheat your oven to 350°F (175°C).

2. Prepare the Wet Ingredients: In a large mixing bowl, combine the cottage cheese, Greek yogurt, eggs, egg whites, and vanilla extract. Whisk together until smooth and well combined. This forms the base of your pancake batter.

3. Mix the Dry Ingredients: In another bowl, mix the oat flour, almond flour, baking powder, and salt. Stir with a whisk to ensure the baking powder is evenly distributed.

4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, stirring continuously with a spatula or a whisk. Mix until you have a smooth batter with no lumps.

5. Fold in Chia Seeds: Gently fold the chia seeds into the pancake batter. Let the batter sit for about 5 minutes to allow the chia seeds to begin absorbing moisture.
