Balsamic Glazed Caprese Chicken Bake
Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups cherry tomatoes, halved
- 8 oz mozzarella cheese, sliced
- 1/2 cup fresh basil leaves
- 3 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 cup marinara sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
2. Prepare the Chicken:
- Pat the chicken breasts dry with paper towels.
- Season with Italian seasoning, salt, and black pepper on both sides.
3. Sear the Chicken:
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Add the seasoned chicken breasts to the skillet.
- Sear the chicken for about 3 minutes per side, or until golden brown.
4. Assemble the Bake:
- Remove the skillet from the heat.
- Pour marinara sauce over the chicken, spreading it evenly.
- Top with sliced mozzarella cheese and cherry tomatoes.
5. Create the Glaze:
- In a small bowl, whisk together balsamic vinegar and red wine vinegar.
- Drizzle the balsamic mixture over the assembled chicken, cheese, and tomatoes.
6. Bake the Chicken:
- Transfer the skillet to the preheated oven.
- Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and slightly golden.
7. Finish with Fresh Basil:
- Remove from the oven and let it rest for 5 minutes.
- Sprinkle fresh basil leaves over the top before serving.
