Balsamic Glazed Strawberry & Cucumber Salad with Feta & Fresh Herbs
Ingredients
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1 pint strawberries, hulled and quartered
- 1 lemon, juiced
- 2 medium cucumbers, sliced
- 4 ounces feta cheese, crumbled
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh basil leaves, chopped
Instructions
1. Prepare the Balsamic Glaze:
- In a small saucepan over medium heat, combine the balsamic vinegar and honey.
- Stir constantly until the mixture begins to simmer.
- Reduce the heat to low and let it cook for about PT10M (10 minutes), stirring occasionally, until thickened to a glaze consistency.
- Remove from heat and let it cool.
2. Prepare the Vegetables and Fruits:
- In a large mixing bowl, combine the quartered strawberries with lemon juice. Toss to coat.
- Add the sliced cucumbers to the bowl with strawberries.
3. Assemble the Salad:
- Add the crumbled feta cheese to the bowl with the strawberries and cucumbers.
- Sprinkle the chopped mint and basil over the salad.
- Gently toss the salad to combine all ingredients thoroughly.
4. Finishing Touches:
- Drizzle the cooled balsamic glaze over the salad.
- Give the salad a gentle toss once more to ensure even distribution of flavors.
5. Serve:
- Transfer the salad to a serving platter or individual plates.
- Garnish with additional mint and basil leaves if desired.
