Bell Pepper Delight: A No-Cook Crunch



Ingredients


- 3 medium bell peppers (any color)
- 1/2 cup cream cheese
- 1/2 cup hummus
- 1 tablespoon fresh chives, finely chopped
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- Optional: 1/4 cup roasted nuts, crushed

Instructions


1. Prepare the Bell Peppers
Wash the bell peppers thoroughly under cold running water. Using a sharp knife, slice off the tops and remove the seeds and membranes. Cut each bell pepper into quarters, creating spoon-like scoops.

2. Mix the Fillings
In a medium-sized bowl, combine the cream cheese with the smoked paprika and black pepper. In another small bowl, mix the hummus with half of the chopped chives.

3. Assemble the Snack
Using a small spoon or spatula, generously fill half of the bell pepper quarters with the cream cheese mixture. Fill the remaining quarters with the hummus mixture. Be sure to smooth the surface for even coverage.

4. Garnish
Sprinkle the remaining chopped chives over the cream cheese-filled bell peppers and a little crushed roasted nuts over the hummus-filled bell peppers for added texture and flavor.

5. Serve
Arrange the filled bell pepper quarters on a plate or serving platter. This colorful snack is ready to be enjoyed immediately or can be stored in the refrigerator for up to two hours.
