Berries and Cream Dream Cake
Ingredients
- 1 box of cake mix (vanilla or white)
- 1 package Jell-O (strawberry or raspberry flavor)
- 2 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 tub (8 oz) whipped topping, thawed
- 1 cup fresh strawberries, sliced
- 1 cup fresh blueberries
- 1 cup fresh raspberries (optional)
- 3 large eggs
- 1/3 cup vegetable oil
- 1 1/4 cups water
Instructions
1. Prepare the Cake Base:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cake mix, eggs, vegetable oil, and 1 cup of water. Beat on medium speed for 2 minutes until smooth.
- Pour the batter into a greased 9x13 inch baking pan. Smooth the top with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
2. Jell-O Layer:
- While the cake is baking, prepare the Jell-O according to the package instructions using the remaining 1/4 cup of water.
- Once the cake is out of the oven, let it cool for about 10 minutes. Poke holes all over the surface of the cake with a fork.
- Pour the Jell-O mixture evenly over the cake, allowing it to seep into the holes.
- Refrigerate the cake for at least 30 minutes to set.
3. Cream Cheese Layer:
- In a medium bowl, beat the softened cream cheese and sugar on medium speed until smooth and creamy.
- Fold in the whipped topping gently until well combined.
- Spread the cream cheese mixture evenly over the chilled cake.
4. Berry Topping:
- Arrange the sliced strawberries, blueberries, and raspberries (if using) decoratively over the cream cheese layer.
5. Chill and Serve:
- Cover the cake with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld together.
- Slice and serve chilled.
