Berry and Stone Fruit Clafoutis with Almond Essence



Ingredients



- 1 cup whole milk
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/2 cup all-purpose flour
- Pinch of salt
- 1 tablespoon unsalted butter, melted
- Baking spray for the dish
- 1/4 cup blackberries
- 1/4 cup blueberries
- 1/4 cup raspberries
- 1 apple, peeled, cored, and thinly sliced
- 1 peach, pitted and sliced
- 1 plum, pitted and sliced
- 1/4 cup sliced almonds
- 1 tablespoon Kirsch (cherry brandy)
- 1 tablespoon cognac
- 1 tablespoon sweet wine
- 2 tablespoons powdered sugar for dusting

Instructions



1. Preheat Oven:
- Preheat the oven to 375°F (190°C).

2. Prepare Baking Dish:
- Generously coat a large pie dish with baking spray to prevent sticking.

3. Prepare the Fruits:
- In a mixing bowl, combine blackberries, blueberries, raspberries, apple slices, peach slices, and plum slices.
- Add Kirsch, cognac, and sweet wine. Gently toss the fruits to coat. Let them marinate while preparing the batter.

4. Make the Batter:
- In a large bowl, whisk together the milk, granulated sugar, eggs, vanilla extract, and almond extract until well combined.
- Sift in the flour and salt, whisking until the batter is smooth and free of lumps.
- Add melted butter to the batter and mix until well incorporated.

5. Assemble the Clafoutis:
- Pour about a 1/4-inch layer of batter into the prepared pie dish.
- Bake in the preheated oven for approximately 5 minutes until the batter just starts to set.

6. Add Fruits and Remaining Batter:
- Remove the dish from the oven. Evenly scatter the marinated fruits over the partially set batter.
- Pour the remaining batter over the fruits, ensuring an even distribution.

7. Bake the Clafoutis:
- Sprinkle sliced almonds over the top of the batter.
- Bake in the oven for 35 to 40 minutes until puffed and golden brown. A knife inserted into the center should come out clean.

8. Cool and Serve:
- Allow the clafoutis to cool slightly. Dust with powdered sugar before serving.
