Berry Brioche French Toast with Fresh Berry Compote



Ingredients



French Toast:
- 4 slices Challah or Brioche bread
- 2 large eggs
- 1 cup milk
- 1/4 cup heavy cream
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 2 tablespoons unsalted butter

Berry Compote:
- 1/4 cup raspberries
- 1/4 cup blueberries
- 1/4 cup strawberries, hulled and quartered
- 1/4 cup blackberries
- 1/4 cup brown sugar
- 2 tablespoons water
- 1 teaspoon vanilla extract

Toppings:
- Powdered sugar, for dusting
- Fresh raspberries, blueberries, strawberries, and blackberries, for garnish

Instructions



1. Prepare the French Toast Mixture:
In a medium bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, and cinnamon until well combined.

2. Soak the Bread:
Lay the bread slices in a single layer in a shallow dish. Pour the egg mixture over the slices, ensuring each piece is thoroughly soaked. Let the bread sit for 10 minutes to absorb the mixture.

3. Preheat the Oven:
Preheat your oven to 375°F (190°C).

4. Prepare the Berry Compote:
In a small saucepan over medium heat, combine the raspberries, blueberries, strawberries, blackberries, brown sugar, water, and vanilla extract. Stir occasionally, allowing the mixture to simmer for about 10 minutes or until the berries have broken down into a thick, syrupy compote. Remove from heat and set aside.

5. Cook the French Toast:
In a large oven-safe skillet, melt the butter over medium heat. Once the butter begins to foam, arrange the soaked bread slices in the skillet. Cook until golden brown on one side, about 3 minutes, then flip and transfer the skillet to the preheated oven. Bake for another 10 minutes until the French toast is puffed and cooked through.

6. Plate and Serve:
Remove the French toast from the oven, allowing it to cool slightly. Dust each slice with powdered sugar and serve topped with a generous spoonful of berry compote. Garnish with additional fresh berries of choice.
