Berry-Infused Pasta with Quinoa Millet Medley
Ingredients
- 8 ounces pasta (your choice of shape)
- 1 cup mixed berries (blueberries, raspberries, strawberries)
- 1 cup canned beans (drained and rinsed)
- 1/2 cup millet
- 1/2 cup quinoa
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1 tablespoon lemon juice
- 1/4 cup grated Parmesan cheese (optional)
Instructions
1. Prepare the Grains:
- In a medium pot, combine 1/2 cup of millet and 1/2 cup of quinoa.
- Add 2 cups of water, a pinch of salt, and bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes until the water is absorbed and the grains are tender. Remove from heat.
2. Cook the Pasta:
- In a large pot, bring 4 quarts of water to a boil. Add a generous pinch of salt.
- Once the water is boiling, add 8 ounces of pasta and cook according to the package instructions until al dente, usually 8-10 minutes.
- Drain the pasta and return it to the pot.
3. Infuse with Berries:
- In a small saucepan, heat 2 tablespoons of olive oil over medium heat.
- Add 1 cup of mixed berries and cook for 3-5 minutes until they begin to soften and release their juices.
- Add 1 teaspoon of dried thyme and 1 tablespoon of lemon juice, then stir well.
4. Combine and Serve:
- Add the berry mixture to the pasta pot, along with the cooked quinoa and millet.
- Toss in 1 cup of canned beans, and season the entire mixture with salt and pepper to taste.
- Gently mix all the ingredients until well-combined.
- If desired, finish with 1/4 cup of grated Parmesan cheese.
- Serve warm, offering a refreshing twist with a medley of textures and flavors.
