Berry-Licious Oven-Baked Breakfast Pancake with Buttermilk Syrup



Ingredients



- 4 tablespoons salted butter
- 4 large eggs
- 1/2 cup milk
- 3/4 cup all-purpose flour
- 1 teaspoon vanilla extract
- 1/4 cup fresh blueberries
- 1/4 cup strawberries, hulled and sliced
- 1/4 cup blackberries
- 1/4 cup raspberries
- 1 cup heavy cream
- 2 tablespoons sugar
- 1 cup whipped cream
- 1/4 cup homemade blueberry syrup
- 2 tablespoons caramel syrup
- 1 teaspoon cinnamon
- 1 cup buttermilk syrup
- 2 tablespoons powdered sugar
- 2 tablespoons maple syrup

Instructions



1. Preheat the Oven:
- Preheat your oven to 425°F (220°C).

2. Prepare the Batter:
- In a mixing bowl, whisk together the eggs until they are light and fluffy.
- Gradually add the milk and vanilla extract, stirring continuously.
- Slowly add the all-purpose flour, ensuring there are no lumps, and the batter is smooth and cohesive.

3. Melt the Butter:
- Place 4 tablespoons of salted butter in a large ovenproof skillet or baking dish.
- Put the skillet in the preheated oven until the butter is completely melted, then carefully remove it.

4. Bake the Pancake:
- Pour the batter into the hot skillet with the melted butter.
- Return the skillet to the oven and bake for approximately 20 minutes, or until the pancake is puffed up and golden brown.

5. Prepare the Sweet Cream Filling:
- In another bowl, whip the heavy cream with 2 tablespoons of sugar until soft peaks form.
- Gently fold in the 1 cup of whipped cream and chill in the refrigerator until ready to use.

6. Prepare the Fruit Topping:
- In a bowl, mix the fresh blueberries, strawberries, blackberries, and raspberries.
- Drizzle with the blueberry syrup and toss gently to combine.

7. Assemble and Serve:
- Remove the pancake from the oven.
- Dust the top with powdered sugar and cinnamon.
- Cut into wedges, and serve with a generous dollop of the sweet cream filling.
- Top with the berry mixture, a drizzle of caramel and buttermilk syrup, and a side of maple syrup for extra sweetness.
