Berry Medley Parfait with Mint-Infused Cream
Ingredients
- 1 cup strawberries, hulled and sliced
- 1 cup blueberries
- 1 cup blackberries
- 1 cup raspberries
- 1/4 cup sugar
- 2 tablespoons rice wine vinegar
- 1/4 cup fresh mint leaves, finely chopped
- 1 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Berry Compote:
- In a medium saucepan over medium heat, combine sliced strawberries, blueberries, blackberries, and raspberries.
- Add 1/4 cup of sugar and 2 tablespoons of rice wine vinegar.
- Stir occasionally and cook for about PT10M (10 minutes) until the berries soften and release their juices.
- Remove from heat and let the compote cool. Set aside.
2. Infuse the Cream:
- Rinse and pat dry the mint leaves. Finely chop them.
- In a separate small saucepan, pour 1 cup of heavy cream.
- Add the chopped mint leaves to the cream.
- On low heat, gently warm the cream, stirring continuously, for about PT5M (5 minutes) until infused with mint flavor.
- Strain the cream into a bowl, discarding the mint leaves.
- Stir in 1 teaspoon of vanilla extract and set aside to cool.
3. Assemble the Parfait:
- Once both the berry compote and mint-infused cream are at room temperature, begin layering in serving glasses.
- Start with a layer of berry compote at the bottom of each glass.
- Add a layer of mint-infused cream on top of the berries.
- Repeat the layers until the glasses are filled, finishing with a dollop of mint-infused cream.
4. Chill and Serve:
- Refrigerate the parfaits for at least PT30M (30 minutes) to allow flavors to meld.
- Garnish with a few additional whole berries and a mint sprig before serving for an added touch of elegance.
