Berry Nut Chocolate Breakfast Bars
Ingredients
- 1 cup peanuts
- 1 cup pea protein powder
- 1/2 cup chocolate chips
- 1/2 cup milk
- 1/2 cup raspberries
- 1/2 cup strawberries, hulled and sliced
- 1/2 cup blackberries
- 1/4 cup raspberry or mixed berry jam
- 1/4 cup chocolate sauce
Instructions
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).
2. Prepare the Berry Mix:
- In a medium bowl, gently wash and pat dry the raspberries, strawberries, and blackberries. Set aside.
3. Combine Dry Ingredients:
- In a large mixing bowl, combine 1 cup of peanuts and 1 cup of pea protein powder. Mix until well combined.
4. Melt the Chocolate:
- In a small microwave-safe bowl, melt 1/2 cup of chocolate chips in 30-second intervals, stirring in between, until smooth.
5. Mix Wet Ingredients:
- Add the melted chocolate, 1/2 cup milk, and 1/4 cup of raspberry jam to the dry ingredients. Stir until the mixture forms a thick batter.
6. Fold in Berries:
- Gently fold in the prepared raspberries, strawberries, and blackberries into the batter, ensuring they are evenly distributed.
7. Prepare the Baking Dish:
- Line an 8x8 inch baking dish with parchment paper or lightly grease it to prevent sticking.
8. Spread the Mixture:
- Pour the batter into the prepared baking dish, spreading it out evenly with a spatula.
9. Bake:
- Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is set and slightly golden.
10. Cool and Top:
- Allow the bars to cool in the dish for about 10 minutes. Drizzle 1/4 cup of chocolate sauce over the top before cutting into bars.
11. Serve:
- Once cooled, cut into 8 even bars. Serve warm or allow to cool completely for firmer bars.
