Blueberry Lemon Cornbread Cobbler Delight



Ingredients



- Nonstick cooking spray
- 2 cups fresh blueberries
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 3/4 cup sugar
- 1/4 cup unsalted butter, melted
- 1 cup buttermilk
- 1 cup all-purpose flour
- 8.5 oz package Jiffy corn muffin mix
- 1/2 teaspoon baking soda
- 1/2 cup sweet corn kernels
- 1 pint vanilla ice cream (for serving)

Instructions



1. Preheat and Prepare:
Preheat your oven to 350°F (175°C). Spray a 9x9-inch baking dish with nonstick cooking spray to prevent sticking.

2. Mix Blueberry Mixture:
In a medium bowl, combine the blueberries, lemon zest, lemon juice, and 1/4 cup of the sugar. Gently toss to coat the blueberries and let them sit for about 15 minutes to release their juices.

3. Prepare Cornbread Topping:
In a large bowl, whisk together the melted unsalted butter and the remaining 1/2 cup of sugar until well combined. Add the buttermilk and whisk until smooth.

4. Combine Dry Ingredients:
Add the all-purpose flour, Jiffy corn muffin mix, and baking soda to the wet mixture. Stir gently until just combined, being careful not to overmix. Fold in the sweet corn kernels.

5. Assemble the Cobbler:
Pour the blueberry mixture into the prepared baking dish, ensuring an even layer. Use a spoon to dollop the cornbread batter on top of the blueberries, spreading gently to cover most of the fruit.

6. Bake:
Place the baking dish in the preheated oven and bake for 35-40 minutes until the cornbread topping is golden brown and a toothpick inserted into the topping comes out clean.
