Blueberry Lemon Stove-Top Cobbler with Vanilla Ice Cream



Ingredients



- For the Blueberry Filling:
- 2 cups fresh blueberries
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1/4 cup water
- 1 tablespoon lemon juice

- For the Cobbler Topping:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1/2 cup buttermilk

- For Serving:
- Whipped cream
- Vanilla ice cream

Instructions



1. Prepare the Blueberry Filling
- In a medium saucepan over medium heat, combine the blueberries, 1/2 cup sugar, and water. Stir to dissolve the sugar.
- In a small bowl, dissolve the cornstarch with lemon juice and one tablespoon of water. Add this mixture to the blueberries.
- Bring the mixture to a simmer, stirring frequently, until thickened and glossy, about PT5M (5 minutes). Remove from heat and let it cool slightly.

2. Make the Cobbler Topping
- In a mixing bowl, whisk together the flour, 1/4 cup sugar, baking powder, baking soda, and salt.
- Stir in the melted butter and buttermilk until just combined. The batter should be thick and lumpy.

3. Assemble the Cobbler
- Pour the blueberry filling into a large, non-stick skillet.
- Carefully drop spoonfuls of the topping over the blueberry mixture, spreading slightly to cover most of the fruit.

4. Cook the Cobbler on the Stove
- Cover the skillet with a lid and cook over low heat for PT20M (20 minutes) until the topping is cooked through and golden. Ensure to check that the bottom does not burn by occasionally adjusting the heat.

5. Serve
- Allow the cobbler to cool slightly before serving.
- Serve each portion with a dollop of whipped cream and a scoop of vanilla ice cream on the side.
