Broccoli and Ham Pasta Salad Delight



Ingredients



- 8 ounces pasta (such as rotini or fusilli)
- 2 cups broccoli florets
- 1/2 cup mayonnaise
- 1 tablespoon white vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon sugar
- 1 cup diced ham
- 1/2 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup green onion, sliced
- 2 tablespoons fresh parsley, chopped

Instructions



1. Prepare the Pasta and Broccoli:
Bring a large pot of salted water to a boil on the stove over high heat. Add the pasta and cook according to package instructions until al dente, about PT8M (8 minutes). In the last 2 minutes of cooking, add the broccoli florets to the pot. Drain the pasta and broccoli and rinse under cold water to stop the cooking process. Set aside.

2. Create the Dressing:
In a large mixing bowl, whisk together the mayonnaise, white vinegar, salt, black pepper, and sugar until smooth.

3. Combine Ingredients:
Add the cooked pasta and broccoli to the bowl with the dressing. Toss to coat evenly. Gently fold in the diced ham, cucumber, red onion, and green onion.

4. Chill the Salad:
Cover the bowl with plastic wrap and refrigerate for at least PT30M (30 minutes) to allow the flavors to meld.

5. Garnish and Serve:
Before serving, stir in the chopped fresh parsley. Adjust seasoning with additional salt and pepper, if needed. Serve chilled as a refreshing lunch option.
