Broiled Artichoke Bruschetta with Herb-Infused Cheese



Ingredients


- 1 can of artichoke hearts (drained)
- 1 French baguette
- 3 tablespoons olive oil
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1/2 teaspoon freshly ground black pepper
- 1 lemon (zested and juiced)
- 1 cup shredded mozzarella cheese

Instructions


1. Prepare the Baguette:
- Preheat your oven’s broiler setting.
- Slice the French baguette into 1/2-inch thick rounds, arranging them on a baking sheet.
- Lightly brush each slice with olive oil using a pastry brush.

2. Artichoke Mixture:
- Roughly chop the drained artichoke hearts and place them in a mixing bowl.
- Add chopped parsley, basil, black pepper, lemon zest, and half of the lemon juice to the bowl.
- Mix well until the ingredients are evenly combined.

3. Assemble the Bruschetta:
- Evenly distribute the artichoke mixture over the olive-oiled baguette slices.
- Sprinkle a generous amount of shredded mozzarella cheese over each piece.

4. Broil:
- Place the baking sheet under the broiler.
- Broil for approximately 3-5 minutes, keeping a close eye on them to prevent burning.
- Remove when the cheese is melted and bubbling with lightly golden edges.

5. Serve:
- Drizzle the remaining lemon juice over the top of the bruschetta for a fresh, tangy finish.
- Serve immediately while warm and enjoy!
