Broiled Bacon and Cheese-Crusted Veggie Medley
Ingredients
1. 8 strips bacon
2. 2 tablespoons butter
3. 1 large onion, finely chopped
4. 2 cups broccoli florets
5. 2 cups cauliflower florets
6. 3 cloves garlic, minced
7. 1 teaspoon kosher salt
8. 1 teaspoon Aleppo pepper
9. 1 cup heavy cream
10. 1 tablespoon lemon juice
11. 1 cup shredded mozzarella cheese
12. 1/2 cup grated Parmesan cheese
Instructions
1. Prepare Ingredients: Dice the bacon into small pieces. Chop the onion finely. Cut the broccoli and cauliflower into small, even florets. Mince the garlic cloves.
2. Cook Bacon: In a large skillet over medium heat, cook the bacon pieces until crispy, about 6 to 8 minutes. Remove bacon from the skillet and drain on a paper towel-lined plate. Discard the extra bacon fat, leaving about 1 tablespoon in the skillet.
3. Sauté Vegetables: Add the butter to the skillet with the reserved bacon fat. Once melted, add the chopped onions and sauté until translucent, about 5 minutes. Stir in the broccoli, cauliflower, and garlic. Cook for another 5 minutes until the vegetables start to soften.
4. Season and Cook: Sprinkle the kosher salt and Aleppo pepper over the vegetables. Pour in the heavy cream and stir well. Allow the mixture to cook for about 3 minutes, letting the cream thicken slightly. Stir in lemon juice and remove from heat.
5. Broil Dish: Preheat your oven to broil. Transfer the creamy vegetable mixture to an oven-safe dish. Layer the cooked bacon on top. Evenly sprinkle mozzarella cheese and then Parmesan cheese over the bacon and vegetables.
6. Finish in the Oven: Place the dish under the broiler until the cheese turns golden-brown and bubbly, approximately 5 minutes. Watch closely to prevent burning.
7. Serve: Remove the dish from the oven and let it cool for a couple of minutes before serving.
