Broiled Burrata-Stuffed Tomatoes with Pesto Drizzle and Heritage Bread
Ingredients
- 6 medium tomatoes
- 8 oz burrata cheese
- 4 tbsp pesto
- 2 tbsp olive oil
- 1 cup canned tomatoes
- 1 cup summer fruit, diced (peaches, berries, figs, or apricots)
- 1/4 cup black olives, sliced
- 1/4 cup pine nuts
- 1/4 cup summer herbs (basil and fresh herbs), chopped
- Salt and pepper to taste
- 1 baguette, sliced
- 2 slices of cornbread, crumbled
- 2 tbsp buttermilk
- 2 tbsp honey
Instructions
1. Prepare the Tomatoes:
- Preheat your broiler to high.
- Cut the tops off the tomatoes and scoop out about half of the insides, creating a bowl-like structure. Reserve the tomato tops.
- Lightly brush the tomatoes with olive oil inside and out. Season with salt and pepper.
2. Stuff the Tomatoes:
- In a bowl, mix the burrata cheese with the diced summer fruit, sliced black olives, and chopped summer herbs.
- Spoon the mixture into the hollowed tomatoes, packing it gently but ensuring it’s slightly heaped.
3. Add Pesto Drizzle:
- Drizzle 1 tbsp of pesto over each stuffed tomato.
4. Broiling:
- Place the stuffed tomatoes on a broiler-safe pan.
- Broil in the preheated oven for about 5-7 minutes or until the cheese has started to melt slightly and the tomato skins look slightly blistered.
5. Prepare the Bread Topping:
- While the tomatoes are broiling, mix the cornbread crumbles with buttermilk, 1 tbsp honey, and a dash of salt. Let the mixture sit briefly.
- Spread the cornbread topping over the slices of baguette.
- On a separate rack, broil the slices of baguette for about 2-3 minutes, or until the topping is golden and crispy.
6. Assemble the Dish:
- Arrange the broiled tomatoes on a serving platter.
- Garnish with toasted pine nuts and a few whole olives.
- Serve with the broiled cornbread crusted baguette slices.
