Broiled Salmon with Spicy Peach-Glazed Broccoli
Ingredients
- 4 salmon fillets (approximately 6 ounces each)
- 2 cups fresh broccoli florets
- 3 tablespoons light olive oil, divided
- 2 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- 3 cloves fresh garlic, minced
- 1 teaspoon crushed red pepper flakes
- 1/4 cup peach jam
Instructions
1. Prepare the Marinade:
- In a small bowl, combine 1 tablespoon of light olive oil, soy sauce, rice wine vinegar, and minced garlic. Stir well until all ingredients are fully blended.
2. Marinate the Salmon:
- Place the salmon fillets in a shallow dish. Pour the marinade over the salmon, ensuring each fillet is well-coated. Cover and marinate for at least 15 minutes in the refrigerator to enhance the flavors.
3. Prepare the Broccoli Glaze:
- In another small bowl, mix the peach jam with the crushed red pepper flakes. Set aside.
4. Preheat the Broiler:
- Preheat your oven's broiler on high. Position a rack about 6 inches from the heat source.
5. Broil the Salmon:
- Remove the salmon from the refrigerator and place fillets on a broiler pan lined with aluminum foil. Drizzle a tablespoon of light olive oil over each fillet to promote even cooking and add a rich flavor.
- Broil the salmon for about 8-10 minutes, or until the fillets are opaque and easily flake with a fork.
6. Sauté the Broccoli:
- Heat the remaining 1 tablespoon of olive oil in a medium skillet over medium-high heat.
- Add the fresh broccoli florets and cook for about 5-7 minutes until they are bright green and tender-crisp.
7. Glaze the Broccoli:
- Pour the peach jam mixture into the skillet with the sautéed broccoli. Stir gently to coat all the florets evenly, and cook for an additional 2 minutes to allow the glaze to caramelize slightly.
8. Serve:
- Arrange the broiled salmon fillets on a serving platter and surround them with the spicy glazed broccoli. Serve immediately, for a beautifully balanced and flavorful dinner.
