Ingredients
- 4 tablespoons butter, softened
- 1 cup breadcrumbs
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, finely chopped
- 4 large tomatoes, ripe and firm
Instructions
1. Prepare the Oven: Preheat your broiler. If you have settings, choose the highest setting to ensure a quick, even broil. Allow it to heat up for at least 5 minutes before cooking.
2. Butter Mixture: In a small bowl, mix the softened butter with 1/4 teaspoon of salt, 1/4 teaspoon of black pepper, and 2 tablespoons of finely chopped fresh parsley. Ensure the mixture is well-blended and set aside.
3. Prepare Breadcrumb Mix: In a separate mixing bowl, combine 1 cup of breadcrumbs with half of the butter mixture. Mix until the breadcrumbs are evenly coated.
4. Prepare the Tomatoes: Wash the tomatoes thoroughly. Cut each tomato in half horizontally and scoop out a small portion of the inside without removing too much flesh. This will create a slight cavity for the butter and crumb filling.
5. Fill the Tomatoes: Place the tomato halves on a broiling pan, cut side up. Spread a thin layer of the remaining butter mixture over each tomato half. Top with the prepared breadcrumb mixture, pressing gently to ensure it adheres.
6. Broil: Place the broiling pan under the hot broiler. Broil for 6-8 minutes, or until the breadcrumbs are golden and crispy and the tomatoes are heated through yet still firm. Keep an eye on them to prevent burning.
