Broiled Tuna Cranberry Melt on Pumpernickel



Ingredients



- 1 can (5 oz) tuna in water, drained
- 2 tablespoons dried cranberries
- 3 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 stalk celery, finely chopped
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon fresh chives, chopped
- 1 tablespoon fresh dill, chopped
- 8 slices pumpernickel bread
- 1 cup leafy greens (such as arugula or baby spinach), washed and dried
- 4 leaves lettuce
- 1 cup grated cheese (cheddar or Swiss)
- 1 teaspoon Spanish paprika
- 8 cucumber slices
- 1 cup fresh herbs (parsley, basil), for garnish
- Pita chips, for serving

Instructions



1. Prepare Tuna Mixture
In a medium-sized mixing bowl, combine the drained tuna, dried cranberries, mayonnaise, Dijon mustard, and chopped celery. Add lemon juice, lemon zest, fresh chives, and dill. Mix until well combined, creating a creamy and textured tuna salad.

2. Assemble the Open-Faced Melts
Place the pumpernickel bread slices on a clean surface. Evenly distribute the tuna mixture onto each slice, spreading it to cover the surface evenly.

3. Add Leafy Greens & Cheese
Top each slice with a small handful of leafy greens and a leaf of lettuce. Sprinkle the grated cheese generously over each open-faced sandwich, allowing it to cover the tuna mixture.

4. Broil
Preheat the broiler in your oven. Place the sandwiches on a baking sheet and carefully place under the broiler on the middle rack. Broil for about 3–4 minutes, keeping a close eye on them to ensure the cheese melts and turns golden brown without burning.

5. Season & Garnish
Remove the baking sheet from the oven and sprinkle each sandwich with a pinch of Spanish paprika for an extra kick of flavor. Garnish with cucumber slices and a mix of fresh herbs.

6. Serve
Transfer the sandwiches to a serving plate and arrange pita chips alongside them. Optionally, add more leafy greens on the side if desired.
