Broiled Turkey and Pesto Open-Faced Sandwich



Ingredients



- 2 medium red bell peppers
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 slices of bread (preferably sourdough or ciabatta)
- 4 tablespoons basil pesto
- 8 slices smoked deli turkey
- 4 slices provolone cheese

Instructions



1. Prepare the Bell Peppers:
- Preheat your oven's broiler setting.
- Wash the red bell peppers, cut them in half, and remove the seeds and stem.
- Toss the pepper halves with 1 tablespoon of olive oil, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper.
- Place the peppers on a baking sheet, skin-side up.
- Broil for approximately 8 minutes or until the skins are charred and blackened.

2. Peel and Slice the Peppers:
- After broiling, place the hot peppers into a bowl and cover it with a lid or plastic wrap.
- Let them steam for about 5 minutes, which will help loosen the skins.
- Once cooled slightly, peel off the charred skins and slice the peppers into strips.

3. Prepare the Bread:
- Set the oven to broil setting again.
- Brush each slice of bread with the remaining olive oil.
- Place them on another baking sheet.
- Broil the bread for about 2 minutes on each side or until golden brown.

4. Assemble the Sandwich:
- Reduce the oven temperature to 450°F (232°C).
- Spread 1 tablespoon of basil pesto on each slice of toasted bread.
- Layer with sliced red pepper strips, 2 slices of smoked turkey, and a slice of provolone cheese on top.
- Return the assembled open-faced sandwiches to the oven.

5. Final Broil:
- Broil for an additional 4-5 minutes, or until the cheese has melted and started to bubble and brown slightly.
- Remove from the oven and let cool slightly before serving.

6. Serve:
- Cut each sandwich in half for easier consumption.
- Enjoy your gourmet open-faced turkey and pesto sandwich right away while warm.
