Cajun Andouille Sausage and Creamy Spaghetti Bake

Ingredients

- 1 pound Andouille sausage, sliced
- 12 ounces spaghetti noodles
- 1 cup diced onion
- 1 cup diced sweet peppers (red, yellow, or orange for variety)
- 1 tablespoon Cajun seasoning
- 1 teaspoon smoked paprika
- 8 ounces cream cheese, softened
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 cup shredded cheddar cheese

Instructions

1. Preheat the oven: Preheat your oven to 350°F (175°C) to get the perfect baking temperature for our dish.
2. Cook the spaghetti: In a large pot, bring water to a boil and add a pinch of salt. Cook the spaghetti noodles according to the package directions until al dente. Drain and set aside.
3. Prepare the sausage mixture: In a large skillet over medium heat, add the sliced Andouille sausage. Sauté for about 5 minutes until it starts to brown.
4. Add vegetables and seasonings: Add the diced onion and diced sweet peppers to the skillet with the sausage. Cook for an additional 3-4 minutes until the onions become translucent.
5. Season the mixture: Stir in the Cajun seasoning and smoked paprika, ensuring the sausage and vegetables are evenly coated. Cook for another 2 minutes to infuse the flavors.
6. Combine with cream cheese: Lower the skillet’s heat and add the cream cheese. Stir continuously until the cream cheese melts and forms a smooth sauce.
7. Incorporate the tomatoes and pasta: Add the drained diced tomatoes and cooked spaghetti to the skillet mixture. Toss until everything is well combined.
8. Transfer to a baking dish: Grease a 9x13-inch baking dish and spread the creamy spaghetti mixture evenly in the dish.
9. Add cheddar cheese: Sprinkle the shredded cheddar cheese evenly over the top of the spaghetti mixture.
10. Bake: Place the baking dish in the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbly.
11. Serve: Remove from the oven and let settle for a few minutes. Serve warm, and enjoy your delicious Cajun Andouille Sausage and Creamy Spaghetti Bake!
