Caramelized Onion & Chive Creamy Dip

Ingredients

- 2 tablespoons unsalted butter
- 3 sweet onions, thinly sliced
- 2 tablespoons packed brown sugar
- 3 cloves garlic, minced
- 1/3 cup dry white wine
- 2 tablespoons balsamic vinegar
- 1 tablespoon Worcestershire sauce
- 1 (8-ounce) package cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons fresh chives, finely chopped

Instructions

1. Caramelize the Onions:
- Heat a large skillet over medium heat. Add the unsalted butter and allow it to melt.
- Add the sliced sweet onions and brown sugar to the skillet. Stir to combine. Cook for about 30 minutes, stirring occasionally until the onions become a deep, golden brown. This will develop their sweetness and mouthwatering flavor.
- Add the minced garlic and cook for another 2 minutes until fragrant.

2. Deglaze the Pan:
- Increase the heat to medium-high. Pour in the dry white wine and balsamic vinegar.
- Stir well, scraping any browned bits from the bottom of the skillet. Cook until the liquid has mostly evaporated, about 2-3 minutes.

3. Add Worcestershire Sauce:
- Stir in the Worcestershire sauce, mixing thoroughly to integrate all flavors. Remove from heat and allow the onion mixture to cool slightly.

4. Prepare the Cream Base:
- In a mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix until smooth and creamy.

5. Combine Ingredients:
- Once the onions have cooled slightly, mix them into the cream base.
- Add kosher salt, freshly ground black pepper, and finely chopped fresh chives. Stir until all ingredients are well incorporated.

6. Chill and Serve:
- Transfer the dip to a serving dish or bowl. Cover with plastic wrap and refrigerate for at least 1 hour to let the flavors meld and develop.
- Serve chilled with your favorite chips, crackers, or vegetable sticks.
