Caramelized Pineapple Vanilla Cream Delight
Ingredients
- 1 whole pineapple, peeled, cored, and cut into rings
- 1/4 cup lemon juice
- 1 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup whole milk
- 1 cup heavy cream
Instructions
1. Prepare the Pineapple:
Place the pineapple rings in a medium-sized bowl. Add 1/4 cup of lemon juice, toss to coat evenly, and set aside for about 10 minutes.
2. Caramelize the Sugar:
In a wide, non-stick skillet over medium heat, add 1 cup of granulated sugar. Heat the sugar until it begins to melt and turns a golden brown color, gently swirling the pan occasionally. This should take about 5-7 minutes.
3. Cook the Pineapple:
Carefully place the pineapple rings into the caramelized sugar in the skillet. Sprinkle with 1/4 teaspoon of salt. Cook for 2-3 minutes on each side until they are caramelized and softened. Remove from the skillet and set aside to cool slightly.
4. Prepare Vanilla Cream Sauce:
In a saucepan, combine 1 teaspoon of vanilla extract, 1 cup of whole milk, and 1 cup of heavy cream. Heat over low-medium heat, stirring constantly, until the mixture begins to steam (do not boil). This should take about 5 minutes.
5. Serve:
To serve, place the caramelized pineapple on a dessert plate. Drizzle with the warm vanilla cream sauce. Garnish with a touch of extra vanilla, if desired.
