Cedar Plank Grilled Salmon with Brown Sugar and Smoked Paprika



Ingredients



- 4 salmon fillets (6 oz each)
- 1 cedar plank (soaked in water for at least 2 hours)
- 2 tablespoons brown sugar
- 1 lemon, sliced into thin rounds
- 1 teaspoon sea salt
- 1 teaspoon smoked paprika
- 4-5 sprigs of fresh thyme

Instructions



1. Prepare the Cedar Plank
Soak the cedar plank in water for at least 2 hours. For best results, use warm water and weigh it down with a heavy object to ensure full immersion.

2. Prepare the Grill
Preheat your charcoal grill to medium heat. On one side of the grill, arrange the charcoal to create an indirect heat zone by stacking them to one side. Allow the grill to heat to about 350°F.

3. Prepare the Salmon
In a small bowl, mix together 2 tablespoons of brown sugar, 1 teaspoon of sea salt, and 1 teaspoon of smoked paprika.

Rinse the salmon fillets under cold water and pat them dry with paper towels. Evenly rub the brown sugar mixture over each fillet.

4. Arrange the Salmon on the Plank
Place the soaked cedar plank on the indirect heat side of the grill. Lay the lemon slices evenly on the plank, then place the coated salmon fillets over the lemon. Top each fillet with a sprig of thyme.

5. Grill the Salmon
Close the grill lid and cook the salmon over indirect heat for approximately 20-25 minutes. Check for doneness by gently flaking the salmon with a fork. The fish should be opaque and flake easily.

6. Rest and Serve
Carefully remove the cedar plank from the grill (it will be hot), and let the salmon rest for a couple of minutes. Serve immediately with additional lemon wedges if desired.
