Charcoal-Grilled Asparagus with Lemon and Feta

Ingredients

- 1 pound fresh asparagus, ends trimmed
- 3 tablespoons extra virgin olive oil
- Zest and juice of 1 large lemon
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 4 ounces crumbled feta cheese

Instructions

1. Prepare the Charcoal Grill:
Begin by lighting your charcoal. Allow the coals to burn until they are covered with a light layer of ash, which typically takes about 20 minutes.

2. Prepare the Asparagus:
While the grill is heating, rinse the asparagus and trim off the tough woody ends. Pat them dry with a clean kitchen towel or paper towels.

3. Season the Asparagus:
In a large bowl, combine the asparagus, 2 tablespoons of the extra virgin olive oil, lemon zest, salt, and black pepper. Toss until the asparagus is evenly coated.

4. Grill the Asparagus:
Once the grill is ready, arrange the asparagus spears perpendicular to the grill grates or use a vegetable grilling basket. Grill for about 5-7 minutes, turning occasionally, until the asparagus is tender and slightly charred.

5. Finish with Lemon and Feta:
Remove the asparagus from the grill and place them on a serving platter. Drizzle with the remaining tablespoon of extra virgin olive oil and the lemon juice, evenly coating the spears. Top with crumbled feta cheese.

6. Serve:
Serve the dish immediately while the asparagus is warm, allowing the feta cheese to slightly melt over the asparagus.
