Charcoal-Grilled Lemon Yogurt Marinated Chicken
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup Greek yogurt
- 1 large lemon (zested and juiced)
- 3 tablespoons olive oil
- 1 tablespoon onion salt
Instructions
1. Prepare the Marinade:
- In a medium bowl, combine 1 cup of Greek yogurt, the zest and juice of one large lemon, 2 tablespoons of olive oil, and 1 tablespoon of onion salt.
- Mix thoroughly until the marinade is smooth and well combined.
2. Marinate the Chicken:
- Place the 4 chicken breasts in a shallow dish or a resealable plastic bag.
- Pour the yogurt marinade over the chicken, ensuring each piece is coated evenly.
- Seal the bag or cover the dish, and refrigerate for at least 1 hour, allowing the flavors to penetrate the meat. For best results, marinate overnight.
3. Prepare the Charcoal Grill:
- Preheat your charcoal grill by filling a chimney starter with charcoal briquettes and lighting it. Allow the coals to burn until they are covered with a light layer of ash (about 15-20 minutes).
- Arrange the hot coals on one side of the grill to create both direct and indirect heat zones.
4. Grill the Chicken:
- Remove the chicken breasts from the marinade, allowing excess marinade to drip off. Discard the remaining marinade.
- Lightly brush the grill grates with 1 tablespoon of olive oil to prevent sticking.
- Place the chicken over direct heat. Grill for about 3-4 minutes on each side to achieve a nice sear and grill marks.
- Move the chicken to the indirect heat zone. Close the grill lid and continue cooking for another 10-12 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).
5. Serve:
- Remove the chicken from the grill and let it rest for 5 minutes before serving. This allows the juices to redistribute, ensuring tender and juicy chicken.
- Slice the chicken breasts and serve with a garnish of fresh lemon slices or a sprinkle of additional lemon zest if desired.
