Charcoal-Grilled Mustard-Glazed Pork Ribs



Ingredients



- 2 racks pork ribs (about 4 pounds total)
- 1/4 cup whole grain mustard
- 2 tablespoons smoked paprika
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 1 cup barbecue sauce
- 1/2 cup apple juice
- 1/4 cup apple cider vinegar

Instructions



1. Preheat and Prepare the Grill:
Set up your charcoal grill for indirect cooking by placing the coals on one side of the grill. Light the charcoal and allow it to burn until they are covered with a thin layer of gray ash. Maintain a temperature of around 250°F.

2. Prepare the Pork Ribs:
Pat the ribs dry with paper towels. Carefully remove the thin membrane from the back of each rack for better flavor penetration.

3. Create the Dry Rub:
In a small bowl, mix together the smoked paprika, salt, black pepper, and garlic powder. Evenly coat the ribs on both sides with the spice mixture, pressing the rub into the meat.

4. Mix the Marinade:
In another bowl, combine the whole grain mustard, apple juice, and apple cider vinegar. This will serve as your glaze and mop sauce during grilling.

5. Smoke the Ribs:
Place the ribs on the grill away from the coals for indirect grilling. Cover and cook for about 2 hours, basting with the mustard-apple glaze every 30 minutes using a basting brush.

6. Glaze and Finish:
Once the ribs are tender, but not yet falling apart, brush them with the barbecue sauce. Move the ribs over the coals for direct heat to caramelize the sauce, about 5 minutes per side. Keep a close eye to prevent burning.

7. Rest and Serve:
Remove the ribs from the grill and let them rest for 10 minutes. Slice between the bones and serve hot with additional barbecue sauce on the side if desired.
