Ingredients



- 4 Trader Joe's Pretzel Buns
- 1 pound chicken breast, boneless and skinless
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup coleslaw mix
- 2 tablespoons mayonnaise
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 8 slices of cheddar cheese
- 2 tablespoons unsalted butter, melted
- 1 tablespoon chopped fresh parsley (optional for garnish)

Instructions



1. Prepare the Charcoal Grill:
- Start by lighting the charcoal in a chimney starter until the coals are covered with grey ash. Once ready, spread the coals in a single layer for direct heat grilling.

2. Marinate the Chicken:
- In a small bowl, mix olive oil, smoked paprika, garlic powder, salt, and black pepper. Rub the mixture evenly over the chicken breasts. Allow them to rest for 10 minutes at room temperature.

3. Make the Honey Mustard Slaw:
- In a medium bowl, whisk together mayonnaise, honey, Dijon mustard, and apple cider vinegar. Toss the coleslaw mix with the dressing until well coated. Refrigerate until ready to use.

4. Grill the Chicken:
- Place the marinated chicken breasts directly over the coals on the grill. Grill each side for 6-8 minutes or until the internal temperature reaches 165°F, and the juices run clear.

5. Prepare the Pretzel Buns:
- Slice the pretzel buns in half and lightly brush the cut sides with melted butter.

6. Toast the Buns:
- Place the buttered sides of the pretzel buns directly on the grill grates. Toast for about 1-2 minutes until golden brown. Remove from heat and set aside.

7. Assemble the Sandwiches:
- Place 2 slices of cheddar cheese on the bottom half of each pretzel bun. Slice the grilled chicken into strips and layer evenly over the cheese. Top with a generous portion of the honey mustard slaw.

8. Finish and Serve:
- Crown each sandwich with the top half of the pretzel bun. Garnish with chopped parsley if desired. Serve immediately.
