Charcoal-Grilled Ribeye with Herb-Infused Butter



Ingredients



- 2 ribeye steaks (approx. 1.5 inches thick)
- 4 tablespoons unsalted butter, softened
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, finely chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
- Olive oil for brushing

Instructions



1. Prepare the Herb Butter:
- In a small bowl, combine the softened butter, minced garlic, rosemary, thyme, parsley, and a pinch of salt. Mix well until the herbs and garlic are evenly distributed throughout the butter.
- Spoon the herb butter mixture onto a piece of plastic wrap. Roll into a log shape, twisting the ends to seal. Refrigerate while you prepare the steaks.

2. Prepare the Ribeye:
- Take the ribeye steaks out of the refrigerator 30 minutes before grilling to bring them to room temperature. This ensures even cooking.
- Pat the steaks dry with a paper towel. Brush them lightly with olive oil on both sides.
- Season both sides of the steaks generously with salt and pepper.

3. Prepare the Charcoal Grill:
- Preheat your charcoal grill for high heat. Arrange the coals to create direct and indirect heat zones.
- Allow the grill temperature to stabilize at approximately 450°F.

4. Grill the Steaks:
- Place the ribeye steaks over the direct heat. Grill for about 4 minutes on each side, depending on preferred doneness, until a nice crust forms.
- Move steaks to the indirect heat zone and continue to grill. For medium-rare, cook the steaks to an internal temperature of 130°F (approximately 4 more minutes).
- Remove the steaks from the grill and let them rest for 5-10 minutes. This allows the juices to redistribute, ensuring a juicy steak.

5. Serve:
- Slice the chilled herb butter into rounds and place them on top of the warm steaks. The heat from the steaks will melt the butter, creating a flavorful sauce.
- Serve immediately with your choice of sides.
