Charcoal Grilled Sweet and Tangy Chicken Delight



Ingredients



- Chicken:
- 4 boneless, skinless chicken breasts

- Marinade:
- 2 tablespoons vegetable oil
- 2 tablespoons avocado oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 tablespoon apple cider vinegar
- 1 tablespoon rice vinegar
- 1 tablespoon balsamic vinegar
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons soy sauce
- 2 tablespoons maple syrup
- 1 tablespoon honey
- 2 tablespoons coconut aminos
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon red pepper flakes
- 1 teaspoon lemon zest

- Glaze:
- 1/4 cup BBQ sauce
- 1 tablespoon chili sauce
- 2 tablespoons teriyaki sauce

Instructions



1. Prepare the Marinade:
- In a large mixing bowl, combine the vegetable oil, avocado oil, red wine vinegar, lemon juice, apple cider vinegar, rice vinegar, balsamic vinegar, lime juice, brown sugar, Worcestershire sauce, soy sauce, maple syrup, honey, coconut aminos, Italian seasoning, garlic powder, red pepper flakes, and lemon zest.
- Whisk until all ingredients are well-blended.

2. Marinate the Chicken:
- Place the chicken breasts in a resealable plastic bag or shallow dish.
- Pour the marinade over the chicken, ensuring each piece is fully coated.
- Seal the bag or cover the dish and refrigerate for at least 2 hours or overnight for maximum flavor.

3. Prepare the Charcoal Grill:
- Light charcoal and let it burn until the coals are covered with white ash.
- Set up the grill for indirect grilling by placing charcoal to one side.

4. Grill the Chicken:
- Remove the chicken from the marinade and let any excess drip off.
- Place the chicken on the grill over indirect heat.
- Cover and cook for about 6 minutes on each side or until the internal temperature reaches 165°F (74°C).
- Occasionally baste the chicken with marinade during grilling to keep it moist and flavorful.

5. Apply the Glaze:
- In a small bowl, mix the BBQ sauce, chili sauce, and teriyaki sauce.
- During the last 5 minutes of grilling, brush the glaze over the chicken, turning once to coat both sides.
- Continue to grill until the glaze caramelizes and the chicken is fully cooked.

6. Serve:
- Remove chicken from the grill and let it rest for 5 minutes before slicing.
- Garnish with additional lemon zest if desired and serve hot.
