Charcoal-Grilled Vegetable Medley with Two-Cheese Topping
Ingredients
- 2 medium zucchinis, sliced into rounds
- 1 cup mushrooms, halved
- 2 bell peppers, cut into chunks
- 1 bunch asparagus, trimmed
- 2 medium tomatoes, quartered
- 1 large onion, cut into wedges
- 1 medium eggplant, cubed
- 1 pound baby red potatoes, halved
- 2 large carrots, sliced
- 4 cloves garlic, minced
- 1 large lemon, sliced
- 3 tablespoons olive oil
- 2 tablespoons unsalted butter, melted
- 1/2 cup Parmesan cheese, grated
- 1/2 cup Feta cheese, crumbled
- 1 1/2 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
Instructions
1. Prepare the Grill: Heat the charcoal grill to medium-high heat. Allow the coals to turn white-hot with a bright red interior, which should take about 20 minutes.
2. Prepare the Vegetables: In a large bowl, combine the zucchini, mushrooms, bell peppers, asparagus, tomatoes, onion, eggplant, potatoes, carrots, and garlic. Drizzle the olive oil and melted butter over the vegetables. Sprinkle with salt and pepper, then toss well to coat all vegetables evenly.
3. Grill the Vegetables: Arrange the vegetables in a single layer on a large grilling tray or directly on grill grates. Start with the potatoes and carrots as they take longer to cook. Grill for about 5 minutes before adding the other vegetables.
4. Season and Turning: Grill for an additional 10 to 15 minutes, turning occasionally, until all vegetables are tender and slightly charred.
5. Add Lemon Slices: Add lemon slices over the grilling vegetables during the last 5 minutes to infuse citrus flavor.
6. Cheese Topping: When vegetables are done, remove them from the grill. Immediately sprinkle grated Parmesan and crumbled Feta cheese evenly over the hot vegetables so the cheeses begin to melt.
7. Serve: Transfer the grilled vegetable medley to a serving platter. Garnish with additional cheese, if desired, and serve warm.
