Ingredients

- 1/2 cup cold butter, cubed

Instructions
1. Preheat the Oven:
Preheat your oven to 425°F (220°C).
2. Mix Dry Ingredients:
In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
3. Incorporate Butter:
Add the cold, cubed butter into the dry ingredients. Use a pastry blender or two forks to cut the butter into the flour mixture until it resembles coarse crumbs.
4. Prepare Sausage:
If not pre-cooked, cook the pork sausage in a skillet over medium heat until browned and fully cooked. Allow it to cool slightly before adding to the dry ingredients.
5. Combine Sausage and Cheese:
Stir the crumbled sausage and shredded cheese into the flour and butter mixture until evenly distributed.
6. Add Buttermilk:
Pour the buttermilk into the mixture, stirring gently with a spatula until just combined. Avoid over-mixing; the dough should be slightly sticky.
7. Shape Biscuits:
Turn the dough out onto a lightly floured surface. Gently knead a few times, then pat down to a thickness of about 1 inch. Use a biscuit cutter or glass to cut out biscuits from the dough.
