Cheese & Herb Breakfast Biscuits
Ingredients
- 1 cup all-purpose flour
- 1/2 cup white whole wheat flour
- 1/2 cup fine oats
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 cup cold unsalted butter, cubed
- 1/2 cup shredded mozzarella or cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup cottage cheese
- 1 large egg
- 2 tablespoons olive oil
Instructions
1. Preheat the Oven
Preheat your oven to 400°F (200°C) to prepare for baking the biscuits.
2. Prepare the Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, white whole wheat flour, fine oats, baking powder, salt, garlic powder, and dried oregano. Mix well until evenly combined.
3. Incorporate the Butter
Add the cubed cold unsalted butter to the flour mixture. Using a pastry cutter or your fingertips, blend the butter into the dry ingredients until the mixture resembles coarse crumbs.
4. Add the Cheeses
Fold in the shredded mozzarella or cheddar cheese, grated Parmesan cheese, and the cottage cheese. Ensure the cheeses are evenly distributed throughout the dry mixture.
5. Make the Dough
In a separate small bowl, whisk together the egg and olive oil. Pour this wet mixture over the flour-cheese mixture. Use a spatula or your hands to gently combine the ingredients until a dough forms. Do not overmix.
6. Shape the Biscuits
Lightly flour a clean surface, then turn the dough out onto it. Gently pat the dough to about 1-inch thickness. Use a biscuit cutter or a floured rim of a drinking glass to cut out biscuits, gathering and reshaping dough scraps as needed.
7. Bake the Biscuits
Place the biscuits onto a baking sheet lined with parchment paper. Ensure they're spaced about 1 inch apart. Bake in the preheated oven for about 15 minutes, or until the biscuits are golden brown on top.
8. Serve Warm
